Discussion: How to fill my time and stomach

Hi. All in all … I’m quite bored. I love my parents but everyone working from home + to chilly Boston “spring” temperatures = me going a little stir crazy. So, I’ve been trying out some new recipes to pass the time and make use of my mom’s stockpile of groceries (granted the lines in my town get into the grocery stores are pretty long). My recent favorite: vegan banana chocolate chip muffins! Now I’m not vegan, but I promise they are delicious and definitely worth a try (I ate three today…so far). Here is the recipe.

But help! I’m running out of ideas to make; what are you favorite meals/desserts/snacks/healthy or not?

Patiently awaiting your go-to favorites,

Hey Helena! I have a great mac’n’cheese recipe that folks enjoy. I had to type it up, as it was only written down (so you know it’s authentic). Enjoy!

    Jared’s Mac’n’Cheese
    – 1 box elbow pasta
    – 2 (1 lb.) blocks of sharp cheddar cheese
    – 1-quart whole milk
    – ½ stick butter
    – ½ cup flour
    – ½-¾ cup panko breadcrumbs (browned in a pan)
    Optional additions:
    – Bacon bits (cooked and crumbled)
    – Jalapenos (diced)
    1. Cook pasta until just before al dente (rinse with cold water)
    2. Set oven to 350˚
    3. Melt butter in LARGE pot/pan
    4. Stir in milk and flour
    5. Melt in 1-1 ½ block of cheese cubed and add salt & pepper
    6. The mixture should be moderately thick and gooey
    7. Put pasta into a rectangular 9×13 Pyrex dish (or another baking dish)
    8. Pour mixture over pasta and mix in
    9. OPTIONAL: add cooked and diced bacon and/or diced jalapenos and mix in here
    10. Add ½-1 block of cubed cheese on top, dispersed intermittently (do not mix in)
    11. Bake for 45-50 minutes at 350˚
    12. Add browned breadcrumbs on top and bake for 10-15 minutes more
    13. Enjoy!
