Baked to perfection in a special homemade dish, this hearty and slightly sweet specialty is worth a special trip to Chile.
While the dish is not complicated, it does require a lot of extra love and attention. Mom recommends making each layer separately before baking them together. Before pouring the corn on top, you must add a hard boiled egg (shelled, but whole) and a collection of fresh olives.The chicken in this dish is especially rich because of the time it takes to slowly cook it with onions and salt.Chile is known for it's unique Chilean Spanish - which includes many original words including choclo (traditionally referred to as Maiz in other Latin American countries) or "corn"Slowly cook the corn together to create a sort of grits/oatmeal consistency.
